Instructions

Stir together all dry ingredients but for raisins and set aside.

Cream egg, molasses, sugar and oil. Blend in buttermilk. Add dry mix to molasses mix. Beat well.

Stir in raisins. Turn batter into two well-greased 16-oz vegetable cans and cover tightly with foil.

Place cans on rack in a tall pan and add water until level reaches within 1 inch of tops of cans. Place top on pan. Bring to slow boil and cook 1 1/2 to 2 hours adding boiling water as necessary to maintain water level.

Remove cans from pan and cool on racks for 10 minutes. Serve while still warm.

Notes

Cans can be boiled in a crock. Place cans directly into crockpot and add water to within 1 inch from can tops. Set crockpot to high and bring to boil. Place lid on crockpot and let boil 2 1/2 to 3 hours.

Garnish servings with whipped cream or a creamy lemon sauce.
